Ingredients:
Chicken thighs
1 tbsp vegetable oil
4 chicken thighs, skin-on, bone-in
1 tsp Italian seasoning dried thyme, oregano
salt and pepper
Mushroom sauce
5 slices bacon cooked, chopped
1 c heavy cream
6 ounces white mushrooms
5 sprigs of fresh thyme
⅛ tsp salt
Directions:
For the Chicken:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Rub all sides of the chicken thighs with salt, pepper, Italian herb seasoning mix, and your preferred herbs.
3. Place a large skillet on the stove and turn the heat to medium-high.
4. Add vegetable oil and allow it to become hot.
5. Add the chicken thighs and sear the skin part for 5 minutes or until they turn brown.
6. Line with aluminium foil on a baking sheet.
7. Remove from the skillet and arrange the chicken thighs onto the prepared baking sheet with the skin-side up.
8. Place them inside the preheated oven and bake for 20 minutes or until they turn brown.
For the Mushroom Sauce:
1. Place a large skillet on the stove and turn the heat to medium.
2. Add vegetable oil and allow it to become hot.
3. Add the mushrooms and sauté until soft. This usually takes about 3 minutes.
4. Add the bacon and cook until crispy.
5. Add fresh thyme, 1/8 tsp of salt, and heavy cream. Stir until well blended and allow the mixture to boil.
6. Turn the heat down to low and simmer the sauce for 2 minutes. Add more seasonings if necessary.
7. Remove the chicken thighs from the oven.
8. Transfer the cooked chicken thighs into the skillet and toss until well coated by the delicious sauce.
9. Serve and enjoy!
