Ingredients:
Oil for frying, enough to reach a depth of 1-2 inches in your frying pan
8 oz. Oaxaca, Manchego or Monterrey jack cheese.
5 Poblano chiles
1/2 c milk
2 Eggs, separated
3/4 c all-purpose flour, divided
1/2 tsp baking soda
1/2 tsp baking powder
Salsa Roja, for serving (or your favourite kind of salsa)
1/2 tsp kosher salt
1/4 tsp ground black pepper
Directions:
For the Peppers:
1. Prepare the oven and preheat to broil.
2. Use paper to pat dry the washed peppers.
3. Arrange the prepared peppers onto a baking sheet, then place them inside the preheated oven. Broil for a couple of minutes until they are charred or black on all sides. Remove from the oven.
4. Place the broiled peppers into a mixing bowl, then cover them with plastic wrap to release the steam. Let them rest for about 5 to 10 minutes.
5. Peel the peppers and remove the blackened skin.
6. Slice each pepper in the middle, then discard the seeds.
7. Slice the cheese into big chunks, then stuff each pepper with it.
For the Batter:
1. Place a large skillet on the stove and turn the heat to medium.
2. Add oil and allow it to become hot.
3. In a mixing bowl, add the egg whites and egg yolks into a large bowl.
4. Whisk each until they form stiff peaks.
5. Add 1/2 cup of flour, baking powder, salt, baking soda, and milk into the bowl with the whipped egg yolks. Beat until well combined.
To Cook:
1. In a mixing bowl, add 1/4 cup of flour. Add the chiles/peppers, then coat them well.
2. Coat the chiles with the batter and shake off any excess.
3. Add them into the hot oil and cook for about 2 minutes on each side or until golden brown.
4. Remove from the pan onto a clean plate lined with paper towels to drain any excess oil.
5. Top each Chili Relleno with Salsa Roja.
6. Serve and enjoy!
