Ingredients:
2 cans tomatoes diced (15 oz. cans)
2 lbs. ground beef or turkey
6 oz. can tomato paste
2 small green peppers about 2 cups diced
15 oz. can tomato sauce
2 cans kidney beans drained and rinsed (15-oz. cans)
1 small yellow onion about 1 ½ cups diced
1 tsp chipotle powder
½ tsp cayenne pepper
15 oz. water
3 tbsp cumin
1 tbsp paprika
3 tbsp chilli powder
2 tbsp garlic powder
2 tbsp onion powder
½ tbsp baking soda optional
½ tbsp salt
1 tsp white pepper
Directions:
1. Place a large Dutch oven on the stove and turn the heat to medium.
2. Add a bit of oil and allow it to become hot.
3. Add the onions and pepper slices, then sauté until soft and a bit caramelized.
4. Add all the seasonings aside from the baking soda, then stir and cook for about a minute.
5. Add the ground meat, then stir and cook until crumbly and brown.
6. Add the rest of the ingredients and stir until well mixed.
7. Add the tomatoes, tomato sauce, tomato paste, and water. Stir until well blended.
8. Reduce the heat to medium-low, then allow the mixture to simmer for 15 minutes.
9. Add the beans and stir until just combined.
10. Add the baking soda, and stir until well mixed. Simmer for a few more seconds.
11. Serve immediately and enjoy!
