Ingredients:
5 Eggs
1 3/4 c whole milk
3 tbsp all-purpose flour
1 tsp baking powder
1/4 tsp salt
1/4 tsp black pepper
3 cans (7 oz) whole green chillies, drained
2 c shredded Monterey Jack cheese, divided
1 c shredded cheddar cheese, divided
salsa and sour cream, for serving (optional)
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Apply cooking spray in a 3-quart baking dish.
Step 3: Add the milk, eggs, baking powder, flour, salt, and pepper into a medium mixing bowl. Whisk until well mixed.
Step 4: Slice the chilli in half and discard any seeds. Arrange the sliced chilis on the bottom of the prepared baking dish.
Step 5: Sprinkle 1 cup of Jack cheese on top as well as 1/2 cup of cheddar.
Step 6: Repeat step 5 until everything is arranged in layers, then spread the egg mixture on top.
Step 7: Place the baking dish inside the preheated oven and bake for about 45 minutes or until done.
Step 8: Remove from the oven and allow it to cool at room temperature for about 5 to 10 minutes.
Step 9: Slice into small cuts.
Step 10: Serve with sour cream and salsa. Enjoy!
