Ingredients:
FOR THE CHOCOLATE CHIP COOKIE DOUGH CUPCAKES:
1½ c (3 sticks) unsalted butter, at room temperature
1½ c packed light brown sugar
4 large Eggs
2⅔ c all-purpose flour
1 tsp baking powder
1 tsp baking soda
¼ tsp salt
1 c milk
2 tsp vanilla extract
1 c chocolate chips (semisweet or bittersweet)
FOR COOKIE DOUGH FILLING:
4 tbsp unsalted butter, at room temperature
6 tbsp packed light brown sugar
1 c plus 2 tablespoons all-purpose flour
7 oz sweetened condensed milk
½ tsp vanilla extract
¼ c mini semisweet chocolate chips
FOR COOKIE DOUGH FROSTING:
1½ c (3 sticks) unsalted butter, at room temperature
¾ c packed light brown sugar
3½ c powdered sugar
1 c all-purpose flour (*see notes for cooked flour)
¾ tsp salt
3 tbsp milk
2½ tsp vanilla extract
Directions:
For the Chocolate Chip Cookie Dough Cupcakes:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Mix the brown sugar and butter, then add eggs gradually. Beat every addition.
Step 3: In another mixing bowl, add the baking powder, flour, salt, and baking soda. Whisk until well combined.
Step 4: Transfer the dry ingredients into the butter mixture and beat on low speed until well mixed, then add the vanilla. Beat until well mixed.
Step 5: Add the chocolate chips and stir until well mixed.
Step 6: Fill each cupcake liner with the batter.
Step 7: Place them inside the oven and bake for about 20 minutes or until done.
Step 8: Remove from the oven allow the cupcakes to cool at room temperature.
For the Cookie Dough Filling:
Step 1: In a mixing bowl, add the sugar and butter. Beat until well blended.
Step 2: Add the milk, vanilla, and flour. Beat until well blended.
Step 3: Add the chocolate chips and stir until well mixed.
Step 4: Cover the bowl with plastic wrap, then place it inside the fridge for about 30 minutes to chill.
Step 5: Fill each cupcake in the centre with the filling.
For the Cookie Dough Frosting:
Step 1: Mix brown sugar and butter until creamy.
Step 2: Add the powdered sugar and beat until well mixed.
Step 3: Add the salt and flour, then beat until well mixed.
Step 4: Add the vanilla extract and milk. Beat until well mixed.
Step 5: Frost each cupcake with the mixture.
Step 6: Serve and enjoy!
