This spectacular Chocolate Cookie Cheesecake is simply the best! The perfect treat to serve for a perfect day that you are having! Have a great one, friends, and I hope you are all well today. Enjoy!
Ingredients:
2 c chocolate sandwich cookie crumbs
2 tbsp butter, melted
¼ c packed brown sugar
1 tsp ground cinnamon
2 lbs cream cheese, softened
1 ¼ c white sugar
⅓ c heavy whipping cream
2 tbsp all-purpose flour
1 tsp vanilla extract
4 Eggs
1 ½ c chocolate sandwich cookie crumbs
16 oz sour cream
¼ c white sugar
1 tsp vanilla extract
1 c heavy whipping cream
1 ½ c semisweet chocolate chips
1 tsp vanilla extract
Directions:
1. In a mixing bowl, add the melted butter, 2 cups of cookie crumbs, cinnamon, and brown sugar. Whisk until well combined.
2. Transfer the mixture into a 10-inch springform pan and spread it evenly.
3. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
4. Place it inside the preheated oven and bake for about 5 minutes. Remove and allow it to cool.
5. Add cream cheese into a large mixing and beat until well the texture becomes smooth.
6. Add the 1/3 cup whipping cream, flour, 1 1/4 cups sugar, and 1 tsp vanilla. Beat until well mixed.
7. Add the eggs gradually and beat every addition until well combined.
8. Transfer about 1/3 of the batter into the pan and spread it evenly.
9. Spread 1 1/2 cups of cookies over the batter.
10. Spread the rest of the batter over the cookies.
11. Place it inside the oven and bake for about 45 minutes.
12. In a mixing bowl, add 1/4 cup sugar, sour cream, and 1 tsp of vanilla. Stir until well mixed.
13. Spread the mixture over the cheesecake, then bake for another 7 minutes.
14. Turn off the oven and let the cheesecake sit inside for another 30 minutes.
15. Remove the cheesecake from the oven and allow it to cool at room temperature.
16. Place a saucepan on the stove, then add the chocolate chips and 1 cup whipping cream. Stir until just mixed. Turn the heat to low and allow the chocolate chips to melt.
17. Add 1 tsp of vanilla and stir until well blended.
18. Pour the mixture over the cheesecake and spread it evenly.
19. Place it inside the fridge for about 8 hours.
20. Serve and enjoy!
Notes:
Remove the cheesecake from the fridge about 30 minutes before serving.
Feel free to decorate it to your liking.
