3 cups flour
3 cups of sugar
1 1/2 cups special dark chocolate cocoa powder
1 tablespoon baking powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons kosher salt
4 large Eggs
1/2 cup sour cream
1 cup buttermilk
1 cup of warm water
1/2 cup Kahlua
1/2 teaspoon espresso powder
1/2 cup canola oil
1 tablespoon pure vanilla extract
Strawberry Buttercream Frosting ingredients:
2 cups unsalted sweet cream butter, softened
6 cups powdered sugar
4 teaspoons vanilla extract
1/2 cup finely diced strawberries
5-7 tablespoons heavy whipping cream
Strawberries for topping:
1 large piping bag fitted with a star tip
Large ice cream scooper
Chocolate Ganache Ingredients:
1 cup semi-sweet chocolate chips
1/2 cup heavy whipping cream
1 large squeeze bottle
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Apply baking spray in three 9-inch cake pans.
Step 3: Add the Kahlua, espresso, and warm water in a small mixing bowl. Whisk until well mixed.
Step 4: Add the flour, cocoa powder, sugar, baking soda, salt, and baking powder in the bowl of the standing mixer. Whisk until well blended.
Step 5: Add the eggs, buttermilk, espresso, sour cream, vanilla extract, and oil gradually and beat every addition.
Step 6: Fill each prepared pan with the batter.
Step 7: Place them inside the preheated oven and bake for about 25 to 35 minutes or until a toothpick comes out clean after inserting it in the middle.
Step 8: Remove from the oven and allow the cakes to cool at room temperature for about 20 minutes.
To Make the Frosting:
Step 1: Beat the butter, powdered sugar, sliced strawberries, heavy whipped cream, and vanilla until well blended.
Step 2: Get about 1 cup of the frosting and transfer it into a piping bag.
To Assemble the Cake:
Step 1: Put a layer of cake on a cake board.
Step 2: Add 4 to 6 scoops of frosting over the cake and spread it evenly.
Step 3: Top the first cake with the second cake. Add frosting on top as well and spread it evenly.
To Make the Chocolate Ganache:
Step 1: Place a small pot on the stove and turn the heat to medium.
Step 2: Add the heavy whipping cream and allow it to become hot.
Step 3: In an oven-safe bowl, add the chocolate chips.
Step 4: Pour the heavy whipping cream on top of the chocolate chips.
Step 5: Let it rest for about a minute, then whisk until well combined.
Step 6: Transfer the ganache into a squeeze bottle.
Step 7: Pour the ganache on the sides of the cake.
Step 8: Design the top of the cake with the frosting.
Step 9: Top each dollop of frosting with strawberries.
Step 10: Serve and enjoy!
