Christmas Cranberry Pound Cake

Prep Time: 30 mins | Cook Time: 1 hr 5 mins | Total Time: 1 hr 35 mins | Yield: 12 Servings

This recipe is to die for! Oh, man, you are so in for a treat!

Ingredients:

For the Cake:

187 grams cake flour-sifted (it’s about 1 1/2 cups plus 3 tbsp cake flour before sifting but you better measure it on kitchen scale because the cake could be dense or dry if you overdo it with the flour)
1/2 tsp baking powder
Pinch of salt
1 c cranberries (fresh or thawed)
140 grams (5 ounces) a white chocolate chunk
115 grams (1/2 cup) unsalted butter-softened at room temperature
300 grams sugar (1 and 1/2 cups)
1/2 c heavy cream
1/2 c mascarpone cheese
3 Eggs
1 tsp vanilla extract
2 tbsp browned butter

Frosting:

56 grams (1/4 cup) unsalted butter-softened
112 grams (4 ounces) cream cheese-softened
1 and 1/2 c powdered sugar (or more to make it thick enough to spread on top of the cake)
1 tsp vanilla extract

Garnish:

handful dried cranberries
1 tbsp vegetable oil
1/2 c white chocolate chips

Directions:

Step 1: Prepare the oven and preheat to 190 degrees C or 325 degrees F.

Step 2: Apply butter and sprinkle flour in a 9x5x3-inches loaf pan.

Step 3: In a medium mixing bowl, sift three times the baking powder, salt, and flour.

Step 4: Place a saucepan on the stove and turn the heat to medium.

Step 5: Add 2 tablespoons of butter and allow it to melt.

Step 6: In a mixing bowl, add the vanilla extract and egg. Whisk until well mixed.

Step 7: Add the butter and beat until well blended, then gradually add the sugar.

Step 8: Add the mascarpone and heavy cream. Beat until well mixed.

Step 9: Transfer the dry ingredients into the butter mixture and beat until well mixed as well as the eggs. Make sure to add them gradually.

Step 10: Toss the chocolate and cranberries until well coated with the flour.

Step 11: Add the coated cranberries and chocolate into the batter. Stir until well mixed.

Step 12: Transfer the batter into the pan and spread it evenly.

Step 13: Run a knife in the middle of the cake and pour the caramelized butter.

Step 14: Place it inside the oven and bake for 1 hour or until done.

Step 15: Remove from the oven and let it sit at room temperature to cool.

To Make the Glaze:

Step 1: Mix the cream cheese and soft butter, then gradually add the sugar and vanilla. Beat continuously.

Step 2: Glaze the cooled cake.

For the Garnish:

Step 1: Place a saucepan on the stove and melt the chocolate chips with 1 tbsp of oil.

Step 2: Sprinkle dried cranberries on top and drizzle the chocolate over them.

Step 3: Serve and enjoy!
