Ingredients:
1/2 cup uncooked rice
2 tablespoons extra-virgin olive oil, plus more for drizzling
1 medium onion, chopped
2 tablespoons tomato paste
3 cloves garlic, minced
1 pound ground beef
1 (14.5-ounces) can diced tomatoes
1 1/2 teaspoons dried oregano
Kosher salt
Freshly ground black pepper
6 bell peppers, tops, and cores removed
1 cup shredded Monterey jack
Freshly chopped parsley, for garnish
Directions:
1. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
2. Place a saucepan on the stove and turn the heat to medium.
3. Add the rice and refer to the directions provided on the package on how to cook it.
4. Place a large skillet on the stove and turn the heat medium.
5. Add oil and allow it to become hot.
6. Add the onion and saute until translucent.
7. Add the garlic and saute until aromatic.
8. Add tomato paste and stir until well mixed. Simmer for about a minute.
9. Add the ground beef and cook until crumbly and brown. Discard any excess grease.
10. Add the tomatoes and cooked rice. Stir until well mixed.
11. Add oregano, salt, and pepper to taste. Stir until well mixed. Simmer for 5 minutes.
12. Arrange the peppers into a 9×13-inch baking dish.
13. Drizzle oil over the peppers.
14. Stuff each pepper with the beef mixture, then sprinkle a generous amount of Monterey Jack on top.
15. Cover the baking dish with aluminium foil.
16. Place them inside the preheated oven and bake for 35 minutes.
17. Remove the cover and bake for another 10 minutes or until the cheese has melted completely.
18. Remove from the oven and sprinkle parsley on top.
19. Serve and enjoy!
