Clean Eating Blueberry JAM

by Sheryl July 29, 2020

Who is up for some Jam? I know you have probably tasted a lot of jams but I assure you that you have not yet tried this amazing recipe of jam! Last week, I was browsing the internet for new and quick jam recipes that I can try for the next day’s breakfast. This was the first recipe that I saw. I was hooked when I read the name of the recipe. I love blueberries that’s why I immediately saved all the steps and started right away. Give this one a try and I am sure that you are gonna love it. Breakfast and snacks will be awesome again! I serve this with toasted bread. It is the best! It is also perfect as an appetizer. I don’t know but I eat it as is. If you happen to have all the ingredients, by all means, try it now. Enjoy!

Servings: 64 (Yields 4 pint-sized Jars) | Serving Size: 1 tablespoon |

Ingredients

5 cups fresh or frozen blueberries
Pinch kosher or sea salt
2 tablespoons freshly squeezed lemon juice
1 cup coconut palm sugar or honey
1/4 cup corn starch

How to make Clean Eating Blueberry JAM

Step 1: In a large pot, add the frozen blueberries, Pink kosher or sea salt, lemon juice, sugar or honey, and corn starch.

Step 2: Place the pot on the stove and turn the heat to medium. Allow the mixture to boil.

Step 3: Turn the heat down and bring it to a simmer then allow it to boil again for 10 minutes or until the sauce becomes thick.

Step 4: Mash the berries while it is still in the pot.

Step 5: Remove the pot from the heat and allow it to cool to room temperature.

Step 6: Transfer the jam into the jars and put it inside the fridge to chill.
