Ingredients:
FOR THE CAKE:
2 ½ c cake flour
¾ c unsalted butter softened to room temperature
5 Egg whites, room temperature
¾ c buttermilk
1 ¾ c granulated sugar
1 teaspoon vanilla extract
1 tablespoon baking powder
1 c shredded, sweetened coconut
½ teaspoon kosher salt
½ teaspoon almond extract
FOR THE FROSTING:
1 package (8 oz) cream cheese, softened to room temperature
½ c unsalted butter softened
¼ c heavy cream
2 c shredded, sweetened coconut
5 c powdered sugar
Directions:
Cake:
1. In a mixing bowl, add 1/4 cup of buttermilk and egg whites. Beat until well mixed.
2. In another mixing bowl, add almond extract, vanilla extract, sugar, and butter. Beat until well blended.
3. Add all the dry ingredients and beat until well blended.
4. Transfer the egg white mixture, then beat until well mixed.
5. Add the rest of the milk and beat again until well mixed.
6. Add the coconut and stir until well combined.
7. Apply cooking spray into two 9-inch cake pans.
8. Transfer the batter into the prepared cake pans and spread it evenly.
9. Place them inside the preheated oven and bake for about 26 minutes or until a toothpick comes out clean after inserting it in the middle.
10. Remove from the oven and allow it to cool at room temperature.
Frosting:
1. In the bowl of a stand mixer, add cream cheese and butter. Beat for about 3 minutes or until well blended.
2. Add the heavy cream and powdered sugar, then beat until well blended.
Assemble:
1. Put a cake over a cake stand.
2. Top the first cake with the frosting and spread it evenly.
3. Place the second cake on top of the first one, then spread the rest of the frosting all over.
4. Scatter the coconut all over the cakes.
5. Serve and enjoy!
Note:
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 3 months.
