Ingredients:
For the pastry
1 c very cold butter cut into small cubes
2 ½ c flour
½ teaspoon salt
1/4 c to 1/3 ice water, only enough to make a dough form.
For the coconut cream filling
3 c whole milk
1/3 c flour
2/3 c sugar
pinch of salt
1 c unsweetened fine coconut
3 slightly beaten extra-large egg yolks
4 tablespoons butter
2 tsp vanilla extract
1/4 teaspoon pure almond extract
For the vanilla whipped cream
1 c whipping cream
1 teaspoon vanilla extract
3 tablespoons icing sugar, powdered sugar
Directions:
To Make the Pastry:
Step 1: Mix the slices of cold butter, flour, and salt until well mixed.
Step 2: Add cold water and stir until well mixed.
Step 3: Split the dough into 2 even round shapes and use your hands to flatten them. Cover each ball with plastic wrap and place them inside the fridge.
Step 4: Roll the dough and transfer it to a 10-inch pie plate.
Step 5: Use a fork to poke small holes below the pastry shell, then place it inside the fridge to chill for 20 minutes.
To Make the Coconut Filling:
Step 1: Heat the milk until just boiling.
Step 2: Place a saucepan with the sugar, flour, and coconut on the stove. Turn the heat to medium-low, then add the hot milk. Make sure to stir from time to time. Do this until the texture of the sauce becomes thick.
Step 3: Remove the pan from the heat. Get 1/2 cup of the mixture and add it into the beaten egg yolks. Whisk until well mixed.
Step 4: Pour egg mixture into the pot and stir until well blended.
Step 5: Add the vanilla, almond extract, and vanilla. Stir until well mixed.
Step 6: Remove from the heat and allow it to cool.
Step 7: Spread the filling over the pie shells.
Step 8: Allow the pie shells to cool for a couple of hours.
To Make the Vanilla Whipped Cream:
Step 1: Mix the icing sugar, whipping cream, and vanilla extract. Beat until well mixed.
Step 2: Spread the mixture over the coconut filling, then sprinkle toasted coconut on top.
Step 3: Serve and enjoy!
