Lucky for you, because all you need to do is to follow these ingredients and directions, and you are good to go! You can always add more ingredients to this if you wish. Ingredients:
1 ½ c vegetable oil
4 boneless skinless chicken breasts
Buttermilk Marinade
2 large eggs, whisked
2 c buttermilk
3 tsp salt
Breading
1 ½ c all-purpose flour
¾ tsp paprika
½ tsp cayenne pepper
½ c breadcrumbs, plain or Italian
2 ½ tsp seasoned salt
1 ½ tsp black pepper
Directions:
Preparation Work:
1. Use a meat mallet to gently pound each chicken into 1/2-inch-thick pieces.
2. Use paper towels to pat dry the chicken.
3. In a mixing bowl, add the buttermilk, eggs, and salt. Beat until well mixed.
4. Add the chicken pieces into the buttermilk and marinate for about 1 to 2 hours.
5. Prepare the mashed potatoes and keep them warm. Prepare the gravy as well.
To Cook the Chicken:
1. Remove the chicken pieces from the marinade into a bowl with the breading mix. Coat each completely and shake off any excess.
2. Place a skillet on the stove and turn the heat to about 350 degrees F.
3. Add oil and allow it to become hot.
4. Add the chicken and cook each side for about 5 minutes or until they turn golden brown.
5. Remove the chicken from the skillet onto a cooling rack.
6. Serve hot with the prepared gravy and mashed potatoes. Enjoy!
