This meatloaf has always been my comfort food! Perfect to serve for lunch or dinner, this Cracker Barrel Meatloaf will never disappoint you!
Ingredients:
Meatloaf:
1/2 green bell pepper, finely diced (you can use red too)
1 tsp ground oregano
1 c crushed Ritz crackers, about 1 1/2 sleeves
3 c fresh shredded cheddar cheese
1 1/2 pounds (24 oz) 80/20 ground beef
1 tsp ground thyme
3 large eggs, beaten
1/2 c whole milk
1 small yellow onion, finely diced
2 tbsp fresh parsley, finely chopped
1/2 tsp salt
1/8 tsp ground black pepper
1 tbsp Worcestershire sauce
1 tsp garlic powder
Topping:
1 tsp apple cider vinegar MEATLOAF RECIPE W/ RITZ CRACKERS
1 tsp yellow mustard
1/2 c light brown sugar, packed
1/2 c ketchup
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. In a large mixing bowl, add the ground beef. Break it apart into large crumbs with a spatula.
3. Add the remaining ingredients for the meatloaf into the bowl with the ground beef. Use your clean hands to mix everything until well blended.
4. Line with aluminium foil into a baking dish, then apply cooking spray on it.
5. Add the meat mixture to the middle of the prepared baking dish. Form the mixture into a meatloaf.
6. Place the baking dish in the preheated oven and bake the meatloaf for about 30 minutes.
7. Meanwhile, in a mixing bowl, add all the ingredients for the topping. Stir until well blended.
8. Remove the meatloaf from the oven, then add the topping over and spread it evenly.
9. Put it back inside the oven and bake for 20 to 30 minutes more or until the top turns golden brown.
10. Remove the meatloaf from the oven and allow it to sit at room temperature for at least 10 minutes to incorporate all the flavors.
11. Slice and serve. Enjoy!
Notes:
Make sure to use freshly shredded cheese for this recipe for the best result.
You can omit the bell pepper if you want.
