“I know!” That’s what Monica from “Friends” used to say. This Crawfish Monica will get you to say the same expression with just one bite. Try this recipe now and prepare to fall in love. Enjoy!
Ingredients:
½ c Dry White Wine
2 tbsp olive oil
2 lbs. Louisiana crawfish tails
1 lb. rotini pasta
6 tbsp Butter
1 medium yellow onion chopped
1 tbsp Creole seasoning plus some for the crawfish
4 cloves garlic chopped
1 bunch green onions chopped
2 c Heavy Cream
½ tsp cayenne optional
1 c Parmesan cheese grated and divided
½ c parsley chopped
1 tbsp fresh lemon juice
Directions:
1. Refer to the directions provided on the package of the pasta on how to cook it. Set aside about 1/4 cup of the pasta water for later use.
2. Drain the pasta and put it back into the pot.
3. In a mixing bowl, add the crawfish tails. Sprinkle the Creole seasoning on top and toss until well coated.
4. Place a pan on the stove and turn the heat to medium. Add butter and allow it to melt.
5. Add the onions and sauté until translucent.
6. Add the garlic and sauté until aromatic.
7. Add cayenne and Creole seasoning, then stir until well combined. Cook for another 2 minutes.
8. Pour in the wine and stir until well blended. Simmer for a few minutes until it reduces its volume.
9. Add the lemon juice and cream. Stir until well blended and simmer for a few more minutes until the sauce becomes thick.
10. Add the crawfish tails and stir until well mixed. Simmer for about 3 minutes.
11. Add the parsley and green onions, then stir until well mixed.
12. Pour the reserved pasta water over the pasta, then drizzle olive oil on top. Toss until well coated.
13. Add the pasta into the sauce and toss until well coated.
14. Add 1/2 cup of Parmesan cheese and stir until well combined.
15. Garnish with herbs and more cheese. (I highly recommend you add more cheese!)
16. Serve hot and enjoy!
