This Crawfish Monica was love at first bite for me! I first had this at a friend’s wedding. I am so glad that I got this recipe because it is just too perfect! Here you go, friends. Enjoy!
Ingredients:
6 tbsp Butter
2 tbsp olive oil
2 lbs. Louisiana crawfish tails
1 lb. rotini pasta
1 medium yellow onion chopped
½ c Dry White Wine
1 tbsp Creole seasoning plus some for the crawfish
4 cloves garlic chopped
2 c Heavy Cream
1 tbsp fresh lemon juice
1 c Parmesan cheese grated and divided
½ c parsley chopped
1 bunch green onions chopped
½ tsp cayenne optional
Directions:
1. Refer to the directions provided on the package of the pasta on how to cook it. Set aside about 1/4 cup of the pasta water for later use.
2. Drain the pasta and put it back into the pot.
3. In a mixing bowl, add the crawfish tails. Sprinkle the Creole seasoning on top and toss until well coated.
4. Place a pan on the stove and turn the heat to medium. Add butter and allow it to melt.
5. Add the onions and sauté until translucent.
6. Add the garlic and sauté until aromatic.
7. Add cayenne and Creole seasoning, then stir until well combined. Cook for about 2 minutes.
8. Add the wine and stir until well blended. Simmer for a few minutes until it reduces its volume.
9. Add the lemon juice and cream. Stir until well mixed and simmer for a few more minutes until the texture of the sauce becomes thick.
10. Add the crawfish tails and stir until well mixed. Simmer for about 3 minutes.
11. Add the parsley and green onions, then stir until well mixed.
12. Pour the pasta water over the pasta, then drizzle olive oil on top. Toss until well coated.
13. Add the pasta into the sauce and toss until well coated.
14. Add 1/2 cup of Parmesan cheese and stir until well combined.
15. Garnish with your preferred herbs and more cheese.
16. Serve and enjoy!
