CREAM OF MUSHROOM SOUP

Prep Time: 10 mins | Cook Time: 30 mins | Total Time: 40 mins | Yield: 6 Servings

Mushroom soup at its finest! This will be the best food you will ever have today so give it a try! Have a wonderful day, friends. Enjoy!

Ingredients:

4 tbsp butter
1 tbsp oil
2 onions diced
4 cloves garlic minced
1 1/2 pounds (750 grams) fresh brown mushrooms sliced
4 tsp chopped thyme divided
1/2 c Marsala wine (any dry red or white wine)
6 tbsp all-purpose flour
4 c low sodium chicken broth or stock
1-2 tsp salt adjust to taste
1/2-1 tsp black cracked pepper adjust to taste
2 beef bouillon cubes, crumbled
1 c heavy cream or half&half (sub with evaporated milk)
Chopped fresh parsley and thyme to serve

Directions:

Step 1: Place a large pot on the stove and turn the heat to medium-high.

Step 2: Add in butter and allow it to melt.

Step 3: Add in the onion and saute for about 2 to 3 minutes or until translucent.

Step 4: Add in the garlic and saute for another minute or until aromatic.

Step 5: Add in the mushrooms and 2 teaspoons of thyme. Cook for 5 more minutes.

Step 6: Add in the wine and stir until well combined. Allow the mixture to simmer for another 3 minutes.

Step 7: Sprinkle flour and stir until well mixed, then cook for another 2 minutes.

Step 8: Add in the chicken stock and stir until well combined, then allow the mixture to boil.

Step 9: Turn the heat down to low-medium and add in the crumbled bouillon cubes, salt, and pepper to taste.

Step 10: Cover the pot and simmer for about 10 to 15 minutes or until thick. Make sure to stir from time to time.

Step 11: Turn the heat down to low, then add in the half&half and cream. Stir until well combined.

Step 12: Simmer for a few minutes. Add more salt and pepper if needed.

Step 13: Add in the rest of the thyme and parsley. Stir until well mixed.

Step 14: Ladle the soup into serving bowls.

Step 15: Serve and enjoy!
