Ingredients:
For Searing
8 ounces cremini mushrooms, sliced
2 tablespoons olive oil
6 pieces of chicken thighs, skinless and boneless
For the Creamy Sauce
1/2 c chicken broth
3/4 c shredded parmesan or 1/2 cup grated/finely shredded parmesan
1/2 teaspoon garlic powder
1 teaspoon minced garlic
salt and pepper to taste
1 c spinach
1 tablespoon flour or cornstarch (optional) if you want a thick creamy sauce
1 c heavy cream or heavy whipping cream
4 tablespoons unsalted butter
Directions:
1. Place a skillet on the stove and turn the heat to medium.
2. Add olive oil and allow it to become hot.
3. Add the chicken thighs, then fry each side for about 5 minutes or until they turn golden brown.
4. Transfer the chicken onto a clean plate. Sprinkle a bit of salt and pepper to season. Set aside.
5. Add the cremini mushrooms into the same skillet, then sauté until tender. Transfer onto a clean plate.
6. Add butter into the same skillet and allow it to melt.
7. Add the garlic and sauté until aromatic.
8. Add the chicken broth, Parmesan cheese, and heavy cream. Stir until well blended. Sprinkle salt and pepper to season. Simmer the sauce for 2 minutes or until the texture becomes thick.
9. Add the mushrooms and chicken back into the skillet, then toss until well coated by the delicious sauce. Let it simmer for a few minutes.
10. Add the spinach and cook until wilted completely.
11. Serve right away over pasta or rice. Enjoy!
Notes:
Feel free to use chicken breasts for this recipe.
You can also use canned mushrooms for this recipe.
You may not add salt if you are going to use salted butter.
