8 ounces (240g) farfalle pasta
1 lb (450g) shrimp, peeled and deveined
1 teaspoon onion powder
3 garlic cloves, minced
1/4 tsp salt and cracked black pepper
4 oz (120g) chopped sun-dried tomatoes, drained from oil – keep 2 tbsp oil reserved
1 c (240ml) half-and-half (or whipping cream)
1/4 c (60ml) vegetable or chicken broth
1 c shredded mozzarella (or parmesan)
1 tbsp dried basil
1 tsp crushed fennel seeds, optional
1/4 tsp red chilli pepper flakes
1/8 tsp paprika
1/2 c reserved cooked pasta water (or more)
1 tbsp grated parmesan, for garnish
For the Creamy Shrimp Pasta:
Step 1: Refer to the directions provided on the package of the pasta on how to cook it. Drain and rinse with cold water to stop the cooking process.
Step 2: Season the shrimp with onion powder.
Step 3: Place a skillet on the stove and turn the heat to medium.
Step 4: Add oil and allow it to become hot.
Step 5: Add the shrimp and cook each side until golden brown. Transfer the shrimp onto a clean plate.
Step 6: Add the minced garlic and sun-dried tomatoes into the same skillet. Sauté until aromatic.
Step 7: Add the half & half and broth. Stir until well mixed, then allow the mixture to simmer.
Step 8: Add the mozzarella cheese and stir until well mixed. Reduce the heat to low and simmer until thick.
Step 9: Add the fennel seeds, dried basil, paprika, and crushed red pepper flakes, and paprika. Stir until well mixed.
Step 10: Add the al dente pasta and toss until well mixed.
Step 11: Add the shrimp and stir until mixed.
Step 12: Simmer everything for a few minutes.
Step 13: Serve and enjoy!
