Super satisfying, very comforting, and a rustic Italian sausage and potato soup. I’m sure you’ll love this hearty, rich, and creamy soup! To make this, all you need are just a couple of simple ingredients that you might already have on hand. It’s the perfect soup for cold weather. The mild Italian sausage brings out the flavor of this dish without overwhelming the kids. If you prefer more spice, simply add a tsp of red pepper flakes. Serve this warming soup immediately. Leftovers are also delicious!
INGREDIENTS
2 lb. Russet potatoes, diced
1 lb. mild Italian sausage
3 c. chopped kale or spinach
1 c. heavy cream
6 c. low-sodium chicken stock
½ c. parmesan cheese, shredded
Olive oil, for garnish
Kosher salt and black pepper, to taste
How to make Creamy Italian Sausage and Potato Soup
Step 1: In a large stock pot or Dutch oven, brown and crumble the Italian sausage on medium-high heat. Using a slotted spoon, remove the sausage and let the excess drippings drain from the pot.
Step 2: To the pot, return the sausage. Add the potatoes along with the chicken stock, half tsp salt, and half tsp black pepper. Bring everything to a boil. Once boiling, adjust the heat to medium. Continue to cook for another 10 to 12 minutes or until the potatoes are tender.
Step 3: Remove half of the potatoes from the pot using a slotted spoon. Mash the potatoes in another bowl and place them back in the pot.
Step 4: Add the kale or spinach leaves, heavy cream, and extra salt and pepper. Mix well and continue to cook for additional 2 to 3 minutes until the kale is tender.
Step 5: Serve the Creamy Italian Sausage and Potato Soup right away garnished with shredded Parmesan cheese, some freshly cracked black pepper, and a drizzle of olive oil. Enjoy!
