The sun-dried tomato, it gave this Creamy Tuscan Chicken a wonderful extra flavor! The sauce is the sure winner in this dish. A must-try recipe that you will surely enjoy!
Ingredients:
3 tbsp reserved sun-dried tomato oil or olive oil, divided
1 1/2 tsp onion powder
1 1/2 tsp paprika
1 1/2 lbs (700 grams) large boneless and skinless chicken breasts, halved horizontally to make 4 fillets (I use 2 large breasts — 12 ounces or 350 grams each)
1 tsp salt (adjust to your tastes)
3/4 tsp black cracked pepper (adjust to your tastes)
For The Sauce:
3 c spinach
1/2 c fresh grated Parmesan cheese
2 tbsp minced garlic 6 cloves
1 1/2 c heavy or thickened cream (or evaporated milk for lower calorie/fat)
5 ounces 150g jarred sun-dried tomato strips in oil, drained (reserve 3 tbsp of oil for cooking)
1 tsp Dijon mustard
2 tbsp fresh chopped parsley to serve
Directions:
1. Sprinkle onion powder, paprika, salt, and pepper over the chicken. Toss until well coated.
2. Place a large skillet on the stove and turn the heat to medium-high.
3. Add 2 tbsp of the sun-dried tomato oil and allow it to become hot.
4. Add the chicken, then sear each side for about 6 to 8 minutes or until they turn golden brown. Make sure to sear the chicken in batches if needed.
5. Place the seared chicken onto a clean plate.
6. In the same skillet, add the rest of the oil and allow it to become hot.
7. Add the garlic, then sauté until aromatic.
8. Add the sun-dried tomatoes, then cook for about 2 minutes.
9. Add the Dijon mustard and stir until well blended.
10. Turn the heat down to low, then add the cream and stir until well blended. Sprinkle salt and pepper to season, then simmer for a few minutes.
11. Add the spinach, then cook until wilted completely.
12. Add the Parmesan cheese and stir until just combined. Simmer for another minute.
13. Put the chicken back into the skillet, then toss until well coated with the delicious sauce.
14. Sprinkle freshly chopped parsley on top to garnish.
15. Serve and enjoy!
Notes:
I like serving this over pasta, rice, or steamed veggies.
Feel free to add 2 tsp of Italian seasoning and 1/2 cup of white wine for extra flavors.
