Ingredients:
1 tablespoon Olive Oil
1 pound Salmon Fillets 3 or 4 salmon fillets
1 teaspoon Italian Seasoning
1/4 teaspoon salt
White cream sauce:
6-8 cloves Garlic peeled
1/4 c Sun-dried tomatoes chopped
5 ounces Fresh Spinach
1 c Pitted green Italian Olives
1/4 c Vegetable broth
3/4 c Coconut Cream
Directions:
Step 1: Use paper towels to pat dry the washed fish fillets.
Step 2: Season the fish with salt, pepper, and Italian seasoning.
Step 3: Place a non-stick pan on the stove and turn the heat to medium.
Step 4: Add oil and allow it to become hot.
Step 5: Add the fish and cook for 4 minutes or until golden brown on both sides.
Step 6: Remove the fish from the skillet to a clean plate.
Step 7: In the same skillet, add the garlic and sauté for a minute or until aromatic.
Step 8: Add the sliced tomatoes, spinach, olives, and broth. Stir until well mixed.
Step 9: Turn the heat down to low and cook the spinach until wilted.
Step 10: Add the coconut cream, then stir and cook for another minute.
Step 11: Put the salmon back to the skillet and toss until coated with the sauce.
Step 12: Add more seasonings if needed.
Step 13: Serve and enjoy!
