The combination of all the flavors in each bite of this Crispy Baked Eggplant Parmesan is superb! Serve this as is or with pasta, and you have yourself a meal to remember!
Ingredients:
1/2 tsp garlic powder
1 and 1/2 c marinara sauce
2 Eggs, beaten
1 c panko bread crumbs
2 medium-sized eggplants, about 2 lbs. total
salt
1/2 c Parmesan cheese, fresh grated
2 tbsp olive oil
1 ½ c shredded mozzarella
1 tsp dried oregano
2 tbsp minced parsley, optional for garnish
1 tsp kosher salt
1/2 tsp black pepper
Directions:
1. Prepare the oven and preheat to 200 degrees C or 400 degrees F. Place the oven rack on the 2nd rack.
2. Apply olive oil onto a large baking sheet.
3. Slice into 1-inch thick-lengthwise the eggplant.
4. Sprinkle salt on all sides of the eggplant, then allow them to rest for at least 30 minutes or more at room temperature to release the moisture.
5. Use paper towels to pat dry the eggplants. Sprinkle salt and pepper to season.
6. In a mixing bowl, add grated Parmesan cheese, garlic powder, Panko bread crumbs, black pepper, oregano, salt, and pepper. Whisk until well blended.
7. In a separate mixing bowl, add eggs and beat until smooth.
8. Dredge each eggplant slice into the beaten egg, then shake off any excess.
9. Dip each into the bread crumb mixture. Make sure to coat each well.
10. Add the eggplant slices onto the prepared baking sheet and arrange them in a single layer.
11. Put the baking sheet in the preheated oven and bake the eggplant slices for about 20 minutes or until they turn golden brown. Make sure to flip the eggplants after 10 minutes to cook the other sides.
12. Top each eggplant slice with 1/4 cup of marinara sauce and cheese.
13. Bake them for another 10 minutes or until the cheese has melted completely. Broil for another 2 minutes or until the cheese turns golden brown.
14. Remove from the oven and sprinkle freshly chopped parsley on top to garnish.
15. Serve and enjoy!
