Ingredients:
2 1/2 to 3-pound chicken parts or pieces
BUTTERMILK BRINE
2 to 3 cups buttermilk
1 teaspoon salt
1 teaspoon pepper
1 teaspoon seasoning salt
FLOUR BATTER INGREDIENTS
3 cups self-rising flour
2 tablespoons seasoning salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
1 teaspoon Hungarian paprika
1 teaspoon salt
1/2 teaspoon garlic powder
COOKING OIL
peanut oil
Directions:
For the Buttermilk Brine:
Step 1: Wash the chicken and discard fat.
Step 2: In a mixing bowl, add buttermilk, seasoning, salt, and pepper. Stir until well mixed.
Step 3: Add the chicken and toss until well coated with the brining solution.
Step 4: Place it inside the fridge to marinate for about 8 hours.
For the Batter:
Step 1: In a resealable bag, add flour, cayenne pepper, Hungarian paprika, garlic powder, seasoning salt, salt, and pepper. Shake the bag until well mixed.
Step 2: Coat each brined chicken with the batter. Shake off any excess.
To Fry:
Step 1: Place a frying pan on the stove and turn the heat to medium.
Step 2: Add enough oil to submerge the chicken, then allow it to become hot.
Step 3: Add the coated chicken and cook until they turn golden brown.
Step 4: Place them onto a clean plate lined with paper towels to drain any excess oil.
Step 5: Serve hot and enjoy!
