Ingredients:
3 tablespoons olive oil
1 clove of garlic, minced
4 large carrots, sliced
4 medium-size potatoes, diced into approximately 1-inch pieces
2 lbs. of beef stew meat cut into approximately 1-inch pieces
1/4 c all-purpose flour
1 1/2 c beef broth separated
2 tsp Worcestershire sauce
1 tsp paprika
1 onion, diced
3/4 c frozen peas, thawed
2-3 teaspoons cornstarch
1 tsp salt
1/2 tsp ground black pepper
Directions:
1. Apply cooking spray in a slow cooker or crockpot.
2. In a resealable bag, add paprika, flour, salt, and pepper. Shake the bag until well blended.
3. Add 1/2 of the meat to the bag, then shake it again until well coated with the flour mixture.
4. Place a large pan on the stove and turn the heat to medium.
5. Add olive oil and allow it to become hot.
6. Add the onions and garlic, then saute until translucent and aromatic.
7. Add the beef, then sear all sides for a few minutes until nicely browned. Transfer everything into the prepared slow cooker or crockpot. Repeat the process with the rest of the meat.
8. Add 1/2 of the broth into the pan, then scrape the bottom to get the browned bits. Pour the mixture into the slow cooker including the rest of the broth and Worcestershire sauce.
9. Cover and seal the slow cooker, then cook for about 2 hours on a high setting or 4 hours on a low setting.
10. Remove the cover, then add the carrots and potatoes. Stir until well mixed, then cook for 1 hour on a high setting or 3 hours on a low setting.
11. Add the slurry (cornstarch and water mixture) into the slow cooker, then stir until well blended. Allow the sauce to become thick. Cook everything for 30 more minutes.
12. Serve immediately and enjoy!
