These heavenly sandwiches are the definition of perfection! My only advice to you is to be very generous with the amount of cheese that you are going to add. Just do it and thank me later! Have a great day, friends. Enjoy!
Ingredients:
6 hoagie rolls
12 thin slices of provolone cheese or 6 regular
1 16 ounces jar mild pepperoncini peppers/sliced pepper rings
jarred roasted red peppers patted dry, optional
Giardiniera. optional
SLOW COOKER ITALIAN BEEF
3-5 pounds beef chuck roast trimmed of excess fat
1 tbsp vegetable oil
1 14.5 ounces can low sodium beef broth
1 c Coke (Not diet)
1/4 c Worcestershire sauce
1/4 c reduced-sodium soy sauce
3 tbsp dried minced onions
1 tbsp beef bouillon
2 teaspoons EACH dried oregano, dried basil, dried parsley, garlic powder
1/2 teaspoon EACH salt, pepper, dried thyme
1/3 c pepperoncini juice (from pepperoncini jar listed above)
Directions:
1. Place a large skillet on the stove and turn the heat to medium-high.
2. add vegetable oil and allow it to become hot.
3. Add the meat and sear each side for a few minutes until brown.
4. Put the seared meat into a 6-quart slow cooker.
5. Add the rest of the ingredients for the roast into the slow cooker. Stir until well combined.
6. Cover the slow cooker and cook for about 8 hours on a low setting or 4 hours on a high setting or until the meat is fork-tender.
7. Use two forks to shred the meat into small pieces.
8. Cook for another 30 minutes on a low setting.
9. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
10. Arrange the slices of rolls onto a baking tray.
11. Place them inside the preheated oven and bake for about 5 minutes.
12. Stuff each bun with the meat and your preferred toppings.
13. Top everything with a generous amount of cheese.
14. Put them back inside the oven and bake for another 10 minutes or until the cheese has melted completely.
15. Serve hot and enjoy!
Note:
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 5 days.
