Ingredients:
3-1/2 pounds sweet potatoes, peeled and cut into 1/2″ pieces
1/2 c brown sugar
2 tbsp butter, melted
1 tbsp pumpkin pie spice
1 tbsp vanilla
1 tbsp water
1 tsp salt
2 c mini marshmallows
whole pecans for serving
Directions:
Step 1: Apply cooking spray in a 6-quart slow cooker.
Step 2: Add the sliced potatoes into the prepared slow cooker.
Step 3: In a mixing bowl, add the melted butter, brown sugar, vanilla, pumpkin pie spice, salt, and water. Stir until well mixed.
Step 4: Pour the mixture on top of the potatoes. Stir until well coated.
Step 5: Cover and seal the slow cooker, then cook for 4 hours on a high setting or until the potatoes are fork-tender.
Step 6: Add the mini marshmallows over the potatoes. Cover and slow cooker and cook for another 5 minutes or until the marshmallows are melted completely.
Step 7: Sprinkle sugar-covered pecans over each serving. Enjoy!
