Directions:
To Rinse the Zucchini:
1. Rinse the zucchini with water. Use a scrub if needed to clean them thoroughly.
2. Remove any damaged parts of the zucchini.
To Prepare the Zucchini:
1. Feel free to prepare the zucchini depending on how you would use it.
2. Chop the zucchini if you are going to use them in soup or stir fry.
3. Shred the zucchini if you are planning on using it for zucchini bread or ratatouille.
To Blanch the Zucchini:
1. You need to blanch the zucchini to prevent it from becoming mushy inside the freezer. Blanching removes the enzymes from the zucchini.
2. Place a pot with water on the stove turn the heat to medium.
3. Add the zucchini and blanch for about a minute.
4. Remove the zucchini from the pot into a bowl with ice water. This will help the zucchini stop the cooking process.
5. Place them inside the freezer.
To Double Freeze Zucchini:
1. Place the blanched zucchini inside a resealable plastic bag.
2. Place the bag inside the freezer.
3. If you want to divide the zucchini easier, you arrange them onto a baking sheet lined with parchment paper, then place the baking sheet inside the freezer.
4. This process will make the zucchini much easier to split for your cooking.
