Easy, soothing, and delicious! These three words best describe this Easy Chicken Noodle Soup! You need this in your life, I’m telling you! Feel free to add more ingredients if you wish. Ingredients:
2 tablespoons olive oil
1 medium onion, finely chopped
4 chicken thighs, skins removed (bone-in or boneless)
6 c water
8 c chicken broth, we used low sodium
2 medium celery sticks, finely chopped
1/2-pound rotini pasta
2 carrots, sliced into rings
1 teaspoon Mrs Dash, or your favourite salt-free seasoning
3 tablespoons fresh or frozen dill
1 garlic clove, pressed
1 tablespoon sea salt, or to taste
Directions:
1. Place a large pot on the stove and turn the heat to medium.
2. Add 8 cups of chicken broth, 6 cups of water, and 1 tablespoon salt. Stir until well mixed.
3. Allow the mixture to boil, then add the chicken thighs. Cook for about 20 minutes.
4. Place a large skillet on the stove and turn the heat to medium-high.
5. Add 2 tablespoons of olive oil and allow it to become hot.
6. Add the onion and celery, then sauté until soft.
7. Transfer the sauteed veggies into the pot with the chicken.
8. Add 1/2 pound of pasta and carrots into the pot with the soup. Stir until just mixed. Cook over low heat for about 15 minutes or until the pasta is al dente.
9. Remove chicken from the pot and use two forks to shred them into small pieces. Put them back into the pot.
10. Add 1 teaspoon of Mrs Dash and salt to season.
11. Serve and enjoy!
