A big thanks to my dear friend, Anita, for this very special recipe! If you haven’t tried this one yet, then you have got to consider it! Oh, man, you are so in for a treat. Enjoy!
Ingredients:
1 tsp (4 g) instant yeast
1 tbsp (14 g) olive oil, plus more for drizzling
2 c (256 g) all-purpose flour, plus more for sprinkling
165 g (scant 3/4 cup) lukewarm water
1 tsp (5 g) kosher salt
Directions:
1. Add salt, flour, and instant yeast into a mixing bowl. Whisk until well mixed.
2. Add oil and water, then whisk again until well mixed and turns into a dough.
3. Knead for a few minutes until the texture becomes sticky.
4. Drizzle olive oil over the dough, then cover it with a damp towel. Let it rest for 1 hour and 30 minutes in a warm area to double its size.
5. Prepare the oven and preheat to 225 degrees C or 550 degrees F.
6. Divide one sheet of parchment paper into 6 even squares.
7. Sprinkle flour onto a flat surface, then place the dough on it. Knead and cut it into 6 even pieces.
8. Roll each dough into a ball and allow them to rise for about 30 minutes at room temperature.
9. Use a rolling pin to flatten each dough.
10. Distribute each dough onto each of the prepared baking sheets.
11. Allow them to rest for another 15 minutes at room temperature.
12. Add 3 doughs at a time inside the preheated oven and bake for about 2 minutes or until they turn golden brown.
13. Remove from the oven and cover them with a towel. Repeat the process with the rest of the dough.
14. Serve and enjoy!
Notes:
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 3 days or 3 months inside the freezer.
