Ingredients:
4 boneless, skinless chicken breasts, butterflied
2 tbsp olive oil
3 tbsp butter
1/3 c chicken or beef stock
1 c shredded mozzarella or gruyere cheese (or a mix of both!)
5-6 large onions, thinly sliced
1 tsp fresh thyme
a few sprigs of fresh thyme
1/4 c freshly grated parmesan cheese
A pinch each of salt and pepper
Directions:
1. Place a cast-iron skillet on the stove and turn the heat to medium.
2. Add butter and allow it to melt.
3. Add the onions and sauté until they caramelize. Make sure to stir often to prevent the onions from burning.
4. Season with salt, pepper, and fresh thyme. Stir until well mixed.
5. Remove the caramelized onions from the skillet into a mixing bowl.
6. In another mixing bowl, add the shredded cheese. Stir until well mixed.
7. Stuff each chicken breast with caramelized onions and shredded cheeses. Use toothpicks to secure each stuffed chicken breast.
8. Add olive oil into the same skillet and allow it to become hot over medium-high heat.
9. Add the stuffed chicken breasts into the skillet and cook each side until they turn brown.
10. Remove from the skillet onto a clean plate.
11. In the same skillet, pour in the chicken stock and the rest of the onions. Scrape the bottom of the skillet to get the browned bits.
12. Put the chicken back to the skillet and spoon the sauce on top.
13. Sprinkle fresh thyme on top.
14. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
15. Transfer the skillet into the preheated oven and bake the chicken for 20 minutes or until done.
16. Remove from the oven and allow the chicken to rest for a couple of minutes at room temperature.
