The amazing taste of the caramelized onions combined with juicy chicken is just pure joy! Oh, man, you are so in for a treat!
3 tbsp butter
5-6 large onions, thinly sliced
1 tsp fresh thyme
a pinch each of salt and pepper
4 boneless, skinless chicken breasts, butterflied
1 c shredded mozzarella or gruyere cheese (or a mix of both!)
1/4 c freshly grated parmesan cheese
2 tbsp olive oil
1/3 c chicken or beef stock
a few sprigs of fresh thyme
Step 1: Place a large cast-iron skillet on the stove and turn the heat to medium.
Step 2: Add the butter and allow it to melt.
Step 3: Add the diced onions and sauté for a few minutes until caramelized.
Step 4: Add the fresh thyme and season with salt and pepper to taste. Stir until well mixed.
Step 5: Remove the brown onions and transfer them into a bowl.
Step 6: Turn off the heat of the stove.
Step 7: In another mixing bowl, add the shredded gruyere, Parmesan, and mozzarella cheese. Stir until well mixed.
Step 8: Stuff each chicken breast with the shredded cheese and caramelized onions. Use toothpicks to lock the stuffed chicken breasts.
Step 9: Place the same skillet on the stove and turn the heat to medium-high.
Step 10: Add olive oil and allow it to become hot.
Step 11: Add the chicken breasts and cook each side until brown.
Step 12: Remove the skillet and chicken from the heat and transfer the chicken breasts onto a clean plate.
Step 13: Add the rest of the caramelized onions and chicken broth into the skillet.
Step 14: Put the chicken back to the skillet together with a few sprigs of thyme.
Step 15: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 16: Place the chicken inside the preheated oven and bake for 20 minutes or until done.
Step 17: Remove from the oven and let them sit at room temperature to cool for a couple of minutes, then remove the toothpicks.
Step 18: Serve over rice or pasta and top it with the onions and pan sauce. Enjoy!
