Well-seasoned chicken baked to perfection! These Chicken Bites will be the highlight of your day, I’m telling you! In just 25 minutes, you can have the best dish to serve for lunch or dinner! Serve these delicious chicken bites over rice or mashed potatoes, and you have yourself a meal to remember. Enjoy!
Ingredients:
2 tbsp unsalted butter, diced
1/4 tsp fresh ground pepper
1 lb (450g) chicken breasts, skinless and boneless
1 tsp Italian seasoning
1 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp onion powder
1/8 tsp cayenne pepper
1 tsp salt
Fresh chopped parsley, for garnish
1 tsp instant chicken stock, optional (lower the salt amount if using)
Directions:
1. Prepare the oven and preheat to 220 degrees C or 420 degrees F.
2. Slice the chicken into 1-inch cuts.
3. Add Italian seasoning, paprika, cayenne pepper, garlic powder, onion powder, chicken stock, salt, and pepper into a mixing bowl. Stir until well blended.
4. Add the chicken pieces into the prepared baking dish and arrange them in a single layer.
5. Sprinkle the seasonings and drizzle olive oil over the chicken, then toss until well coated.
6. Add dots of butter over the chicken pieces.
7. Place the chicken inside the preheated oven and bake for about 16 to 18 minutes or until done. Make sure to stir the chicken once to cook all sides.
8. Remove from the oven, then sprinkle freshly chopped parsley on top of the chicken to garnish.
9. Serve with cauliflower rice. Enjoy!
Notes:
Place any leftovers in an airtight container, then let them sit at room temperature. They can last up to 2 days or two months in the freezer.
Reheat these chicken bites in the microwave for a few minutes.
