Egg Roll in a Bowl | Keto + Paleo

Oh, man, I finally found the best egg roll recipe! It’s not only delicious but is also very healthy! Give it a try now and enjoy!

Ingredients:

2 tablespoons olive oil divided
1 pound ground turkey or beef 93/7
1 ½ c sweet onion finely diced
1 c carrots shredded
½ teaspoon ginger minced
3 cloves garlic crushed
¼ c chicken broth
5 c cabbage cut into ¼-inch shreds
2 tablespoons coconut aminos
Tamari or soy sauce, gluten-free*
2 teaspoons apple cider vinegar or rice wine vinegar
½ teaspoon salt to taste
¼ teaspoon pepper to taste
1 teaspoon toasted sesame oil
Toasted sesame seeds optional
Green onions optional

Directions:

Step 1: Place a large saucepan on the stove and turn the heat to medium.

Step 2: Add in 1 tablespoon of olive oil and allow it to become hot.

Step 3: Add in the ground turkey and cook for 5 to 6 minutes or until brown.

Step 4: Add in the onion and 1 tablespoon of oil. Saute for 3 minutes or until translucent.

Step 5: Add in the shredded carrots, ginger, and garlic. Saute for 2 minutes or until well combined.

Step 6: Pour in the chicken broth and make sure to scrape the bottom to get the brown bits.

Step 7: Add in the coconut aminos/soy sauce, cabbage, vinegar, salt, and pepper. Stir until well combined, and then cover.

Step 8: Turn the heat down to medium-low and cook for 15 minutes or until the cabbage is tender.

Step 9: Remove from the heat and drizzle sesame oil and sprinkle green onions on top as well as sesame seeds.

Step 10: Serve over rice. Enjoy!

Notes:

Feel free to use coconut liquid aminos, gluten-free soy sauce, and Tamari sauce.
