This a staple at my house. My family’s favorite breakfast, brunch, even dinner dish. And this great to bring at potlucks. A breeze to make, you can even prepare it a day ahead. This is the best farm-friendly casserole you’ll ever have! If you want a spicy alternative you can add some spicy pepper jack cheese. Enjoy!
Ingredients
6 cups of diced potatoes
1 tablespoon of extra virgin olive oil
1 ½ cups of reduced-fat shredded Colby or Monterey blend cheese
6 slices of diced Canadian bacon
2 sliced green onions
24 oz (2 cans) of fat-free evaporated milk
2 cups of egg beaters egg substitute
¼ teaspoon of salt
¼ teaspoon of black pepper
How to make Farmer Casserole
Step 1: Heat the oil in a nonstick skillet over medium heat. Once oil is heated, add in the potatoes and cook until lightly brown.
Step 2: Once cooked, transfer the potatoes in the casserole.
Step 3: Place the ham, cheese, and green onions on top of the potatoes.
Step 4: In a large bowl, combine egg beaters, evaporated milk, salt, and pepper. Mix well.
Step 5: Pour the mixture over the potato mixture.
Step 6: Place the casserole inside the preheated oven and bake at 375 degrees for about 45 to 55 minutes.
Step 7: Once done, remove from the oven and let the casserole set before cutting it to 15 equal portions.
Step 8: Serve warm. Enjoy!
