This French Onion Chicken is an amazing one-skillet meal! It’s super easy and quick to put together. This is the best weeknight dinner you could make today!
1 3/4 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
3 tablespoons extra-virgin olive oil, divided
2 teaspoons freshly chopped thyme
2 cloves garlic, minced
1 large onion, halved and thinly sliced
1/2 teaspoon dried oregano
2 tablespoons all-purpose flour
Freshly chopped parsley, for garnish (optional)
1 1/2 cups low-sodium beef broth
1 cup shredded Gruyère
Freshly ground black pepper
How to make French Onion Chicken
Step 1: Heat 2 tbsp oil in a large skillet over medium heat. Once hot, add the onions and sprinkle with salt, pepper, and thyme. Adjust the heat to medium-low and cook for about 25 minutes, stirring often, until the onions are caramelized and jammy. Next, add the garlic. Stir and cook for another minute until aromatic. Turn the heat off and set the onion mixture aside. Then, wipe the skillet clean.
Step 2: Place the chicken in a large bowl and season with salt, pepper, and oregano. Add the flour and toss to coat the chicken.
Step 3: In the same skillet, heat the rest of the oil over medium-high heat. Once hot, add the chicken and sear for about 8 minutes or until all sides are golden and the chicken is mostly cooked through.
Step 4: Pour in the beef broth and add the caramelized onions. Bring everything to a boil. Once boiling, decrease the heat and simmer for about 10 minutes or until the chicken is completely cooked and the beef broth is slightly reduced.
Step 5: To the skillet, add the Gruyere. Put the lid on and continue to cook for another 2 minutes or until the cheese has melted.
Step 6: Before serving, garnish the French Onion Chicken with some parsley. Enjoy!
