4 Onions, peeled and sliced
4 tablespoons Butter
4 cloves Garlic, minced
1/2 teaspoon Pepper
1 teaspoon thyme
2/3 c Low Sodium Beef Broth
2 tablespoons Balsamic Vinegar
4 Chicken Breasts, boneless skinless
1/2 teaspoon salt
1 c Mozzarella Cheese, shredded
1/2 c Parmesan Cheese, shredded
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: Apply cooking spray in a baking dish.
Step 3: Place a large skillet on the stove and turn the heat to medium-high.
Step 4: Add butter and allow it to melt.
Step 5: Add the chopped onions and sauté for about 5 minutes or until translucent.
Step 6: Turn the heat down to medium, then add the garlic, thyme, and pepper. Sauté for a minute or until aromatic.
Step 7: Add the beef broth and balsamic vinegar. Stir and cook for 10 minutes or until the texture becomes thick.
Step 8: Spread 1/3 of the mixture on the bottom of the prepared baking dish.
Step 9: Put the chicken over the onions and season it with salt.
Step 10: Top the chicken with the rest of the caramelized onions.
Step 11: Sprinkle Parmesan cheese and mozzarella cheese over the onions.
Step 12: Place the baking dish inside the preheated oven and bake for 30 minutes or until done.
Step 13: Remove from the oven and allow it to cool for a few minutes at room temperature.
Step 14: Serve and enjoy!
