Powdered Sugar Glaze:
1 c flour
1 tsp salt
1 tsp baking powder
2 tbsp sugar (my addition)
1/2 tsp cinnamon (my addition)
1/3 c milk
1 tbsp butter, melted or vegetable oil (I used butter)
1 1/4 c peaches, diced (I used 2 fresh peaches which came to a little over 1 1/4 c of peaches)
Granulated sugar in a flat-sided bowl or a powdered sugar glaze
Oil for a fryer or deep-frying pan
1 c confectioners’ sugar
Milk, enough to make a drizzling consistency.
Step 1: In a medium mixing bowl, add the flour, cinnamon, baking powder, sugar, and salt. Whisk until well combined.
Step 2: Add in the eggs, butter, and milk. Whisk until well mixed.
Step 3: Add in the peaches and stir until well combined.
Step 4: Preheat the pan or fryer with oil to 375 degrees F.
Step 5: Add in 1/4 or 1/2 of the batter into the hot oil and cook for 2 to 3 minutes or until they float.
Step 6: Place the cooked peach fritters on a plate lined with paper towels to drain any excess oil.
Step 7: Coat each fritter with sugar on all sides. You can also glaze them if you want.
Step 8: Serve warm and enjoy!
