Ingredients:
2-3 small to medium-sized zucchini, sliced lengthwise in approximately 1/4
1 cup all-purpose flour
2 Eggs, beaten
1/4 cup milk
salt and pepper, to taste
1/2-inch olive oil or extra virgin in a skillet
dipping sauce (ingredients in instructions)
Directions:
Step 1: Slice the zucchini into 1/4-inch strips, then season them with salt and pepper to taste.
Step 2: In a mixing bowl, add the milk and eggs. Beat until well mixed.
Step 3: In another mixing bowl, add the flour, salt, and pepper. Whisk until well combined.
Step 4: Dip each zucchini slice into the egg-milk mixture, then coat it generously with the flour mixture. Repeat this process to the rest of the zucchini slices.
Step 5: Place a skillet on the stove and turn the heat to medium-high.
Step 6: Add enough olive oil and allow it to become hot.
Step 7: Add the zucchini slices into the hot oil and cook until they turn crispy brown.
Step 8: Place the fried zucchini slices onto a clean plate lined with paper towels to drain any excess oil.
Step 9: Serve with your preferred dipping sauce. Enjoy!
To Make the Holly’s Hot Horsey Sauce:
Step 1: Mix 1/2 cup of mayonnaise and 2 tablespoons of horseradish. Stir until well combined.
