Ingredients:
For the lemon brownies
1 ¾ c all-purpose flour
3 Eggs
1 c butter
2-3 lemons
1 ½ c granulated sugar
¾ tsp salt
For the glaze
2 lemons
3 c powdered sugar
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Line with parchment paper a 9×13-inch baking pan.
3. Prepare the lemons. Squeeze them to get 2 tbsp of zest and about 5 tbsp of juice.
4. In a large bowl, add the lemon zest, salt, and flour. Whisk until well combined.
5. In a heat-proof bowl, add the butter. Place it inside the microwave and heat until the butter is melted completely.
6. Add the lemon juice into the bowl with the melted butter. Stir until well blended.
7. Transfer the butter mixture into the flour mixture, then whisk until well mixed.
8. Add eggs gradually and beat every addition until well mixed.
9. Add the sugar and stir until well blended.
10. Transfer the batter into the prepared baking pan and spread it evenly.
11. Place it inside the preheated oven and bake for about 20 minutes.
12. Remove from the oven and let them rest completely at room temperature.
For the Glaze:
1. Prepare the lemons. Squeeze them to get 1 tbsp of zest and about 4 tbsp of juice.
2. In a mixing bowl, add the sifted powdered sugar, lemon zest, and juice. Stir until well blended.
3. Add the glaze over the cooled brownie, then spread it evenly.
4. Let it rest for a few more minutes. Slice into even pieces.
5. Serve and enjoy!
Once the brownie has cooled pour the glaze evenly over the top.
Allow the glaze to set, then cut the brownie into thin bars and store in an airtight container in the refrigerator.
Notes:
Place any leftovers in an airtight container, then place them inside the fridge.
Add more juice if the texture of the glaze is too thick.
Add more sugar if the texture is too thin.
