Ingredients:
FOR THE SALMON AND VEGETABLES
4 to 6 c broccoli florets
4 (6 oz. each) salmon fillets
FOR THE GARLIC BUTTER SAUCE
6 tbsp unsalted butter, melted
4 cloves garlic, minced
1/2 tsp dried thyme
1/2 tsp dried oregano
1 lemon, halved, divided
1/2 tsp dried rosemary
1 tbsp light brown sugar
salt and fresh ground pepper, to taste
chopped fresh parsley, for garnish
Directions:
1. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
2. Apply cooking spray on a sheet pan.
3. Place the salmon fillets and broccoli florets onto the prepared sheet pan and arrange them in layers.
4. Top each fillet with minced garlic.
5. Add melted butter, oregano, brown sugar, rosemary, and thyme into a bowl. Stir until well combined.
6. Pour the mixture on top of the salmon and broccoli. Spread it evenly.
7. Squeeze 1/2 of the lemon on top of the ingredients, then sprinkle salt and pepper to taste.
8. Place them inside the preheated oven and bake for about 15 minutes or until done.
9. Remove from the oven and sprinkle freshly chopped parsley on top.
10. Serve right away with the remaining lemon wedges. Enjoy!
Notes:
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 3 to 4 days and 4 months inside the freezer.
