Ingredients:
1 1/2 pound (650g) chicken breast, cut into strips
1 1/2 pound (650g) baby yellow potatoes, quartered
1 tbsp olive oil
3 tbsp butter, divided
5 garlic cloves, minced
1 tsp fresh thyme, chopped
1 tsp fresh rosemary, chopped
1 tsp fresh oregano, chopped
Salt and fresh cracked pepper
Crushed red chilli pepper flakes, optional
The marinade
1/4 c soy sauce (or coconut amino if you’re strictly paleo)
1 tbsp olive oil
1 tbsp hot sauce (we used Sriracha)
Fresh cracked pepper
Directions:
1. Add the chicken pieces, soy sauce, hot sauce, olive oil, and pepper into a large mixing bowl. Use your hands to coat each chicken strip well. Allow them to marinate for a few minutes.
2. Place a pot with salted water on the stove and turn the heat to high. Allow the water to boil, then add the potatoes. Cook for about 8 minutes. Drain.
3. Place a large skillet on the stove and turn the heat to medium-high.
4. Add 1 tbsp of olive oil and butter. Allow them to become hot and melt.
5. Add the potatoes. Stir and cook for another 5 minutes or until soft.
6. Remove the potatoes from the skillet onto a clean plate.
7. In the same skillet, add more butter and allow it to melt.
8. Add the chicken pieces and arrange them into the skillet.
9. Add red pepper flakes and garlic.
10. Cook each side of the chicken until brown.
11. Add the marinade and herbs. Stir until well combined.
12. Put the potatoes back to the skillet and stir until just mixed. Add more seasonings if needed.
13. Remove the skillet from the heat. Sprinkle Parmesan cheese, chilli pepper, and herbs.
14. Serve and enjoy!
