16 oz (454 g) small button mushrooms
2 tbsp (30 ml) olive oil
4 cloves (4 cloves) garlic, chopped or crushed
1 (1) medium onion, minced
1/2 c (120 ml) chicken stock or white wine
Zest from 1 medium lemon
1 tbsp (15 ml) lemon juice
1/2 tsp (2.5 ml) chilli flakes, or taste
4 tbsp (60 ml) butter, divided
2 tbsp (30 ml) chopped parsley
kosher salt or sea salt, to taste
fresh cracked black pepper, to taste
Step 1: Clean the mushrooms and discard the dried bottoms.
Step 2: Place a large skillet on the stove and turn the heat to medium-high.
Step 3: Add olive oil and allow it to become hot.
Step 4: Add the mushrooms and cook for about 5 minutes or until caramelized.
Step 5: Add butter and allow it to melt.
Step 6: Add the garlic and onions, then sauté until aromatic and translucent.
Step 7: Add the wine or stick, lemon juice, lemon zest, and chilli flakes. Stir and cook for 2 minutes or until it reduces its volume.
Step 8: Add the rest of the butter as well as the parsley. Stir and cook for another minute.
Step 9: Sprinkle salt and pepper to taste.
Step 10: Serve and enjoy!
