Ingredients:
For the Pork Chops & Zucchini
1 1/2 tbsp vegetable oil, divided
2 tbsp butter
4 bone-in pork chops, up to 1/2-inch thick
1 tsp paprika, sweet or smoked
2 zucchinis, sliced into half-moons
salt and fresh ground pepper, to taste
For the Garlic Butter
1/2 tbsp garlic powder
4 tbsp butter, room temperature
1/2 tbsp dried basil
1 tsp dried oregano
2 tsp dried parsley
Directions:
1. Rub with paprika, salt, and pepper all over the pork chops. Make slits on the fat of each pork chop to prevent them from curling up.
2. Place a large skillet on the stove and turn the heat to medium-high.
3. Add 1 tbsp of vegetable oil and butter, then allow them to become hot.
4. Add the pork chops and cook each side for a couple of minutes until an inserted instant-read thermometer registers to about 140 degrees F.
5. Meanwhile, add the garlic powder, butter, dried oregano, dried basil, and dried parsley into a mixing bowl. Stir until well mixed.
6. Remove the pork chops from the pan onto a clean plate, then cover to keep them warm.
7. In the same skillet, add oil and allow it to become hot.
8. Add the zucchini slices, then sprinkle salt and pepper to taste. Cook for about 2 minutes or until they are soft.
9. Remove the zucchini slices from the skillet onto a clean serving plate.
10. Add the pork chops beside the zucchini slices.
11. Top each pork chop with garlic butter.
12. Serve and enjoy!
