Ingredients:
2 large Egg whites
salt and freshly ground black pepper
1/2 c cornstarch
1 1/2 lbs. Boneless, skinless chicken breasts, cut into small pieces
1/2 c all-purpose flour
1/2 c oil (vegetable or canola oil)
For the Sauce:
1/3 c low-sodium soy sauce
1/3 c rice vinegar
2/3 c hoisin sauce
1/4 c light brown sugar, packed
1/3 c low-sodium soy sauce
1 1/2 tsp cornstarch
1/2 tsp crushed red pepper flakes or more, to taste
3 cloves garlic, minced
1 tsp ground ginger, or 1 tbsp fresh minced ginger
Directions:
1. In a mixing bowl, add all the ingredients for the sauce. Stir until well blended.
2. In a large resealable bag, add salt, pepper, cornstarch, and flour. Seal and shake the bag until well blended.
3. In a mixing bowl, add the egg whites and beat until creamy.
4. Add the chicken pieces, then rub each until well coated by the beaten egg whites.
5. Transfer the chicken pieces to the bag with the flour mixture, then shake it until well coated.
6. Place a large skillet on the stove and turn the heat to medium-high.
7. Add oil and allow it to become hot.
8. Add the chicken pieces, then cook each side until golden brown. Transfer the chicken onto a clean plate.
9. In the empty skillet, add the sauce. Scrape the bottom of the skillet to get the browned bits.
10. Stir everything until well blended. Allow the mixture to become thick.
11. Put the chicken pieces back into the skillet, then toss until well coated by the delicious sauce.
12. Serve right away over rice. Enjoy!
Note:
Sprinkle chopped green onions over each serving to garnish.
