This is the ultimate cake recipe I have ever tried! You are so in for a treat, friends. Enjoy!
Ingredients:
CAKE
1 box German chocolate cake mix
1 package Germans sweet chocolate (4 oz)
4 tablespoons chocolate instant pudding mix
3/4 cup hot water
1/2 cup sour cream
1/4 cup vegetable oil
4 large eggs, separated
COCONUT PECAN FILLING
1 can(s) evaporated milk (12 ounces)
1 1/2 cups sugar
1 1/2 stick real butter (not margarine)
4 large Egg yolks, lightly beaten
1 1/2 teaspoons vanilla extract
2 cups toasted sweetened flaked coconut
1 1/2 cups toasted chopped pecans (save a few 1/2 pieces for garnish)
CHOCOLATE GANACHE FROSTING
16 ounces semi-sweet chocolate, chopped
1 1/2 cups heavy whipping cream
2 teaspoons vanilla extract
Directions:
To Make the Cake:
Step 1: Prepare the oven and preheat to 325 degrees F.
Step 2: Grease three 8-inch cake pans.
Step 3: Slice the chocolate into 1-inch cuts.
Step 4: Melt them inside the microwave.
Step 5: In a mixing bowl, add the egg white and beat until it forms stiff peaks.
Step 6: In a large mixing bowl, add the oil and sour cream. Stir until well mixed.
Step 7: Add the melted chocolate and pudding mix. Stir until well mixed.
Step 8: Add the hot water and cake mix. Stir until well combined.
Step 9: Add the egg yolks gradually and beat every addition. Beat until the texture of the batter becomes thick.
Step 10: Add the egg whites and beat until mixed.
Step 11: Fill each prepared pan with the batter and spread it evenly.
Step 12: Place them inside the preheated oven and bake for 30 minutes or until a toothpick comes out clean after inserting it in the middle.
Step 13: Remove from the oven and allow the cakes to cool at room temperature.
To Make the Filling:
Step 1: On a sheet pan, spread the coconut and the pecans.
Step 2: Place the pan inside the oven and toast for 5 minutes at 175 degrees C.
Step 3: Place a saucepan with milk, butter, egg yolks, and sugar on the stove and turn the heat to medium.
Step 4: Stir and cook for about 15 minutes or until the texture becomes thick and the colour turns golden brown.
Step 5: Remove the pan from the heat and add the vanilla. Stir until well mixed.
To Make the Chocolate Ganache:
Step 1: In a mixing bowl, add the chopped chocolate.
Step 2: Place a saucepan with cream on the stove and turn the heat to medium-high. Allow the cream to boil.
Step 3: Remove from the heat and transfer it into the bowl with the chopped chocolate. Stir until well blended.
Step 4: Add the vanilla and stir until well mixed. Allow the mixture to sit for 45 minutes at room temperature.
To Assemble the Cake:
Step 1: Spread 1 cup of the filling on the edges of the first layer.
Step 2: Put the second layer over the other and spread another cup of the filling.
Step 3: Pipe the ganache on the bottom of the cake.
Step 4: Pipe rosettes over the cake and in the middle.
Step 5: Serve and enjoy!
