GINGERBREAD CUPCAKES RECIPE WITH CINNAMON VANILLA BUTTERCREAM FROSTING

Ingredients:

Gingerbread Cupcakes:

1 1/2 c all-purpose flour
1 tsp baking soda
1 1/2 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp ground nutmeg
1/4 tsp ground allspice
1/4 tsp salt
1/2 c unsalted butter * at room temperature
1/2 c dark brown sugar, packed
1 Egg * at room temperature
1/2 c molasses
1/2 c milk * at room temperature

Cinnamon Vanilla Buttercream Frosting:

1/2 c unsalted butter * at room temperature
1 tsp ground cinnamon
1 tbsp vanilla extract
2 c powdered sugar

Directions:

To Make the Gingerbread Cupcakes:

Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.

Step 2: Line with paper liners a cupcake pan.

Step 3: In a medium mixing bowl, add in the all-purpose flour, ground cinnamon, ground ginger, baking soda, ground nutmeg, ground allspice, and salt. Stir until well combined.

Step 4: Add the butter and dark brown sugar into the bowl of an electric mixer. Beat until well blended.

Step 5: Add in the egg and molasses, and then beat until well mixed.

Step 6: Add in the milk gradually as well as the flour mixture and beat until well combined. Make sure to scrape the bottom.

Step 7: Transfer the dough into the prepared cupcake pan and spread it evenly.

Step 8: Place it inside the preheated oven and bake for about 18 to 20 minutes or until it bounces back after touching or until a toothpick comes out clean after inserting it in the middle.

Step 9: Remove from the oven and let it sit at room temperature to cool.

To Make the Cinnamon Vanilla Buttercream Frosting:

Step 1: In the bowl of the electric mixer, add in the butter and beat until whipped.

Step 2: Add in the vanilla extract and cinnamon. Beat until well combined.

Step 3: Add in the powdered sugar gradually and beat until well blended.

Step 4: Spread the frosting on top of the cupcakes.

Step 5: Serve and enjoy!
