Grandma’s Coconut Cream Pie

Prep Time: 20 mins | Cook Time: 1 hr 10 mins | Total Time: 1 hr 30 mins | Yield: 6 to 8 Servings

I am sure that you have not tasted the best pie ever until now! Give this recipe a try and prepare to be amazed. Enjoy!

Ingredients:

1 cup milk
1 cup sweetened, flaked coconut
1 cup light cream
1/2 cup sugar
2 Tablespoons corn starch
2 Eggs, separated
1 teaspoon vanilla
1 pre-made pie crust
8 ounces whipped cream

Directions:

Step 1: Refer to the directions provided on the package of the pie crust on how to bake it.

Step 2: Remove the baked crust from the oven and let it sit at room temperature to cool.

Step 3: In a double boiler, add the light cream and milk. (Feel free to mix 1 scant cup of whole milk and 3 tablespoons of melted butter if you do not have a light cream.)

Step 4: Add the sugar and stir until well mixed.

Step 5: Turn the heat to medium and allow the mixture to boil.

Step 6: In a mixing bowl, add the cornstarch and water. Stir until well mixed.

Step 7: Add the egg yolks and beat until well mixed.

Step 8: Transfer the egg mixture into the double broiler. Stir and cook for about 5 minutes.

Step 9: Remove the boiler from the heat, then add the coconut and vanilla. Stir until well mixed.

Step 10: Allow it to cool at room temperature for at least 30 minutes.

Step 11: Transfer the mixture over the crust and spread it evenly.

Step 12: Cover everything with plastic wrap and place it inside the fridge to chill for at least half an hour.

Step 13: Remove the plastic cover and spread coconut flakes and whipped cream on top.

Step 14: Serve and enjoy!
