Ginger in cookies? That is new to me! I have never tried anything like this. It has a unique flavor that you will not taste in other cookies. I love the taste of the ginger combined with the rest of the ingredients. I think you should give this a try and taste it yourself. Feel free to add about 1/2 tablespoon of ginger if it is overpowering for you. These cookies are not only delicious but it is also very healthy. Enjoy!
Ingredients:
2 cups sifted all-purpose flour
1 tablespoon ground ginger
2 teaspoons baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
¾ cup shortening
1 cup white sugar
1 egg
¼ cup dark molasses
⅓ cup cinnamon sugar
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: In a medium mixing bowl, add in the ginger, baking soda, flour, cinnamon, and salt. Stir until well mixed. Sift into another bowl.
Step 3: In a medium mixing bowl, add in the shortening and beat until the texture becomes creamy.
Step 4: Add in the white sugar and beat until well blended. Add in the dark molasses and egg.
Step 5: Transfer about 1/3 of the flour mixture into the beaten shortening mixture.
Step 6: Transfer the rest of the flour mixture and mix until you form a soft dough.
Step 7: Pinch small amounts and roll to form 1-inch diameter balls. Coat each ball with the cinnamon sugar. Place on the baking sheet and leave 2 inches space apart on each cookie.
Step 8: Place inside the preheated oven and bake for 10 minutes or until cooked through.
Step 9: Remove from the oven and let it sit on a wire rack to cool then store in a resealable container.
Step 10: Serve and enjoy!
