Grandma’s Oatmeal Cake

Prep Time: 10 mins | Cook Time: 40 mins | Total Time: 50 mins | Yield: 9×13-inch cake

This cake will always be my favourite! I am so excited to share the recipe with you today. Give it a try and I am sure that you and your loved ones are going to love it. Enjoy!

Ingredients:

CAKE:

1 cup quick oatmeal
1 1/2 cups of boiling water
1 cup granulated sugar
1 cup brown sugar
1/2 cup oleo (butter or margarine)
2 medium Eggs
1 1/2 cups flour
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon salt

FROSTING:

2 Tablespoons soft oleo (butter)
1 cup brown sugar
1/2 cup milk or cream
1 teaspoon vanilla extract
3/4 cup flaked coconut
3/4 cup chopped pecans

Directions:

Step 1: In a medium mixing bowl, add the oatmeal and boiling water. Stir until well combined. Make sure that there are no lumps.

Step 2: Place the bowl inside the fridge to cool.

Step 3: In a large mixing bowl, add the oleo, sugars, eggs, cinnamon, soda, flour, and salt. Whisk until well combined.

Step 4: Add the cold oatmeal into the flour mixture. Stir until well combined.

Step 5: Apply cooking spray in a 9×13-inch cake pan.

Step 6: Transfer the mixture into the prepared cake pan and spread it evenly.

Step 7: Place the cake pan inside the preheated oven and bake for 175 degrees C or 350 degrees F for about 50 minutes or until done.

To Make the Frosting:

Step 1: Add the sugar, butter, and milk in a small saucepan.

Step 2: Place the saucepan on the stove and turn the heat to medium.

Step 3: Remove the pan from the heat and add in the pecans, coconut, and vanilla.

Step 4: Spread the frosting all over the cake.

Step 5: Serve and enjoy!
